Your choice of shops will depend on how confident you are in your restocking skills and of course how well you know the shops. The number of shops you restock in at the same time will depend on the nature of those shops. Currently, I usually restock in 3 or 4 shops at once, with two of the shops being relatively inactive (hardly restock), and two relatively active (restocks relatively often). I get bored being in fewer than three shops at once because most of your time will be spent on refreshing these shops in the hopes of catching a restock on time. However, if you try to do too many at once, it is highly likely that you will miss a lot of the restocks.
I have seen many restockers who solo a specific shop, as in they are only in a single shop and refresh it continuously. This means they have the least chance of missing a restock in that shop, and many are quite successful restocking like this. What you should do is find a good balance that works for you and for the types of shops you have chosen.
Please remember to use tabs for each shop instead of windows. You can open a new tab simply by pressing Ctrl + Tab. It is far easier and more organized to restock by jumping from tab to tab.
I've often been asked how often one should refresh. Personally, I refresh my shops as much as possible, and usually go non-stop through my shops a few times before I stop to chat or something. If I have 4 different shops open, this means I refresh each one around once every 4-5 seconds, which is good if you want to make sure you catch the restock. Unfortunately, refreshing so often gets you banned faster. For me, I'd rather just not miss the restock and get a ban instead of missing ALL the restocks and not getting banned. I would suggest you refresh each shop at least once every 5 seconds. A good item can be bought in that time, if not less.
I keep mentioning "bans" but never specified what it is. =P A restock ban occurs when all of the shops appear empty for you. This occurs typically after you have been refreshing or buying too often and/or too much. However, no one has given conclusive evidence on the exact criteria TnT uses to ban a person, so it's a lot of luck. I have been banned within 15 minutes before, and sometimes I can go hours without a ban. Bans last anywhere from 2 hours to 2 days. The best way to check if you are banned is to visit the Tiki Tack shop on Mystery Island (shop ID is 21) since this shop stocks pretty much all junk and should never be empty unless you are banned.
